Pie of the Week

Ok, it's the 2nd pie of the week, but I made the mistake of making a pie on Saturday and then Max's friends came over and ate the whole thing, straight from the pan. We only got one small slice each. That pumpkin pie was delicious. Goodbye Libby's back of the can recipe, hello sour cream.

It is summer in Chile and blueberries are 99 cents, hence the blueberry pie with pecan streusel topping. Also, key ingredient - sour cream. This is the key to success, so listen up -- for a no-fail pie choose a recipe with sour cream. Seriously, just do it. Do it. Just do it. Not listening? Then you will not know how good it can get. You will be pie ignorant.

I still haven't got the crust looking pretty, but this one is a little better than the last. Some parts look good and other parts just dissolved into retardedness. It goes in the oven looking perfect, but gets all thin and ugly coming out. I know it looks a little burnt, but that happened later after the crust already proved it was going to be stupid looking, as this is a bake the crust first, then add the filling and bake again kind of pie. I could have covered the crust to prevent it from burning, but honestly, I like it a little crunchy. I will cover the crust with foil next time at the first baking, as that's the only trick left in the book I haven't tried. If it doesn't work I might have to make cookies, which Max has requested. Stupid kid doesn't understand obsession.

Pie of the Week

Creamy pumpkin pie. I have now found a crust I like so next time I will figure out how to make it look pretty instead of freaked out around the edges. Actually, it looked very nice going IN the oven, but it shrank sometime thereafter and I need to figure out how to stop the shrinkage. And finally, I don't have pie weights or beans so I used Max's marble collection, which worked like a charm. Today's lesson: marbles take a very long time to cool down after being in the oven for only 10 minutes.

Apple pie with a crumb topping and a plain butter crust for my office pot luck holiday party. This is the best apple pie I've ever made, and a beauty to boot. Added candied ginger to the topping to make it extra special.

Savory Pie of the Week

Turkey Pot Pie that dripped in the oven setting off the smoke alarm. Then I discovered that my oven mitt has broken the heat prevention barrier and it burned my finger tips as I removed it from the oven. Ouch.

Pie of the Week

Pumpkin with a frozen crust. There is no faking that perfectly crimped edge that I will never be able to make myself. After I use up the last frozen crust (they were on sale, I couldn't resist) it is going to be hand made crusts from now on. I think it's funny how my pies always lean in one direction because my floor is slanty, and thus so is the oven, and thus so is everything that comes out of it.

Half a Pie, Half the Fat

I made a wonderful chemical pudding pie this week. If you have ever tried to find a pie recipe that isn't filled with sugar and fat then... well then you've never looked for a recipe.
So I combined some ideas and made a graham cracker crust, spread peanut butter on the bottom, lined it with bananas (luckily I had enough because one of the four bananas I bought from Mr. Street Fruit Man magically disappeared from my envirosax by the time I got home) and then poured sugar free fat free pudding on top. Sprinkle some slivered almonds and we have Compromise Pie.

I just realized that the craving for pie began last Saturday after we spent the day avoiding the hurricane that never came by watching Waitress, which featured some totally awesome pies.
